Simple and tasty baked chicken Ingredients: 1 handful of - cherry tomatoes - 2 onions - fresh bay leaf - 1 small handful of - salt - large pepper - 1 free-range chicken of around 1.8 kg 3 cloves of - garlic - to taste 1 cl of - lemon juice - 1 chicken stock - diluted in a glass of water.

Phase 1
Preheat the oven to 200°C (thermostat 6). Place two cloves of garlic and bay leaves inside the chicken.
Phase 2
Prepare the sauce by mixing the lemon juice and the glass of chicken stock. Water the chicken generously and pour the remaining juice into the dish.
Phase 3
Sprinkle the coarse salt over the chicken.
Phase 4
Place the chicken in the dish, with the quartered onions and the cherry tomatoes.
Phase 5
Place the chicken in the oven for approximately 1 hour 40 minutes at 200°C. (After 20 minutes of cooking, turn the chicken over and cook for 20 minutes, then place it right side up for further cooking)
Phase 6
Warning: Baste the chicken with its juice as often as possible during cooking (add water if necessary). The chicken will be even softer!
Phase 7
Recoverydrain the juice at the end of cooking, with the tomatoes and onions, in a bowl, and place on the table, with a nice green salad and a pan of new potatoes.
