Soft rice with onions and mushrooms Ingredients: 500 g of - yellow onion - 2 teaspoons of - butter, pepper and salt - 500 g of - round rice - 250 g of - button mushrooms (failing that, canned mushrooms, but with the juice) - 1 dl of - dry white wine - 1 tablespoon of - soy sauce or Maggi for those who like it (I love it!).

Phase 1
Peel and slice the onions. Place them in a microwave dish and adddo teaspoon of butter. Cover and microwave on high power for 8 to 10 minutes.
Phase 2
Once cooked, let them rest for another 5 minutes in the oven.
Phase 3
While the onions are cooking, you can heat 1.5l of salted water in a large saucepan. Slice the fresh mushrooms.
Phase 4
When the water boils, pour in the previously rinsed and drained rice. Add the cooked onions and mushrooms. Add the white wine after 10 minutes.
Phase 5
Cook over medium heat for 20 minutes, or until the rice is tender and melting.
Phase 6
Adjust the seasoning, season well with salt and pepper to taste, and add a knob of butter and the soy sauce.
