Phase 1
Peel, wash and cut into pieces all the vegetables. Slice the onions, chop the garlic.
Phase 2
In a pot, melt the onions and garlic in the olive oil. Leave to cook gently under the lid for 10 minutes.
Phase 3
Add 1 l of water to the pot, as well as carrots and turnips. Salt and pepper.
Phase 4
Continue cooking under the lid for 20 min.
Phase 5
Add zucchini, tomatoes, chickpeas, coriander and turmeric.
Phase 6
Continue cooking under the lid for 25 min.
Phase 7
For the semolina: melt the butter in a pan, add the semolina. Stir.
Phase 8
Off the heat add the same quantity of water as the semolina (2 glasses). Let the semolina absorb it then fluff it up with a fork.
Phase 9
DrePlace the couscous in a dome in a deep dish garnished with the drained raisins and a few vegetables around it.
Phase 10
Present the rest of the vegetables in a separate dish, and their juice in a small soup bowl.
