Chicken jambalaya Ingredients: 200 g of - smoked bacon - 1 - salt onion - 1 teaspoon of - cayenne pepper - 1 - red pepper - 1 - bay leaf - 2 pinches of - thyme - 10 cl of - olive oil - 350 g of - round rice - 350 g of - diced chicken - 200 g of - sliced chorizo - 1 pod - garlic - 100 g of coulis and 200 g of tomato flesh (fresh or canned) - 75 cl of - chicken stock - 2 - celery - 1 pinch of - sage.
Utensils: 1 knife knives - 1 oven ovens - 1 peeler - 1 brush - 1 frying pan - 1 casserole dish - 1 saucepan - pots and pans -

Phase 1
Cut the pepper in half, remove the seeds and internal partitions, cut it into squares.


Phase 2
Peel and slice the celery into sections. Preheat the oven to 180°C.


Phase 3
In a large terrine, brown the chorizo with the bacon for 5 minutes, in the hot oil. Replace with chicken. Brown them on all sides and remove them.


Phase 4
In the same casserole dish, melt the peeled and chopped onion and garlic for 5 minutes. Add the pepper and celery and cook for 8 minutes. while stirring.


Phase 5
Then add the chicken, the bacon, the rice poured in rain, the coulis and the meat of tocrushed mate, thyme, sage, bay leaf, cayenne pepper. Add broth and bring to a boil.


Phase 6
Place in the oven and cook for 40 minutes. Leave the jambalaya for 5 minutes in the turned off oven, door ajar, before serving.
