Beef shank coq au vin style Ingredients: 1 carrot - 25 cl of - red wine - 1 onion - salt - pepper - 500 g of - beef shanks - 1 cube of beef stock - 10 cl of - water, fat - of your choice.

Phase 1
degrease the piece of shank, cut it into pieces and brown them in the fat.
Phase 2
once returned, remove them from the casserole and put the chopped onion in their place (do not burn!)
Phase 3
add the cubed beef stock and deglaze with the wine
Phase 4
let the alcohol evaporate and reduce by around 1/3 before putting the pieces of meat back in the casserole with the onion and the carrot cut into thin strips
Phase 5
add water if not enough liquid and simmer over low heat for at least 2 hours (the meat must be tender, that's better!)
