Phase 1
In a large frying pan, pour olive oil then add the chopped green pepper, the peeled and chopped onion, and the pressed garlic. Leave for a few minutes then add the minced meat, cumin and paprika (or spice mixture). Finally add the red beans, corn and tomato coulis, salt, pepper and chilli. Cook for 10 minutes covered.
Phase 2
Preheat the oven to 200°C.
Phase 3
Garnish each tortilla with cheddar then with ground meat preparation. Roll the tortilla then place it in the dish. Repeat the operation until you fill your gratin dish.
Phase 4
Sprinkle with grated cheddar then bake for 15/20 minutes in the combined steam and fan oven.
Phase 5
Add chopped coriander and lime wedges and a few slices of red onion.
