Total time: 1h05 Preparation: 20 min Rest:- Cooking: 45 min
Phase 1
Mix the lentils, brown rice and bulgur and cook them for 15 to 20 min in boiling water. Drain.
Phase 2
Slice the onion, carrots, leek, mushrooms and ginger. Brown the vegetables in the pan for 15 minutes with a little olive oil until they are very tender.
Phase 3
Then mix the vegetables and cereals in a salad bowl, then add the cornstarch (which will serve as a binding agent). Mix and add the tomato paste, and stir well. Finally, add the spices, don't hesitate to add some so that everything has a lot of flavor. I generally use ateaspoon of curry, 1/2 ground cumin, 3 pinches of Provence herbs, 1/3 nutmeg and salt and pepper. Mix well until you have a well-bound dough that holds together well.
Phase 4
Finally, arrange the preparation on a baking tray in a round/oval shape about 1cm thick. Try to pack everything so that the steak holds together well after cooking. Bake the steaks for 15 minutes. Once golden on the upper side, turn them over with a spatula (they should normally be quite hard/rigid). Return to the oven for 5 minutes so that they grill on the other side.
Phase 5
There you go, it’s ready! To be enjoyed in a hamburger or on its own...! It is possible to store them in the freezer and quickly fry them in the pan or in the microwave at the last minute.
