Simmered pork cheeks, cream and Dijon mustard sauce Ingredients: 1 tablespoon of - Dijon mustard - 3 tablespoons of - olive oil, pepper, salt - 900 g of - pork cheek - 4 - chopped shallots - 5 cl of - white wine - 25 cl of - hot water - 1- cube of chicken stock - 10 cl of - low-fat crème fraîche - 2 tablespoons chopped chives.
Utensils: 1 frying pan - 1 brush - 1 Set 3 best frying pans - 1 saucepan - 1 lid 1 wooden spoon 1 pitter 1 plate -

Phase 1
In a frying pan, brown the pork cheeks in olive oil on both sides.


Phase 2
Remove them and brown the chopped shallots in the same oil, but over low heat.


Phase 3
Return the pork cheeks and add the white wine.


Phase 4
After boiling for 1 minute, add the hot water and the crumbled stock cube.


Phase 5
Bring to the boil, cover and simmer for 1 hour 15 minutes over very low heat. Turn the meat from time to time.


Phase 6
Add the cream and mustard, mix well and simmer for 10 minutes uncovered.


Phase 7
Adjust the seasoning and add the chives.


Phase 8
This preparation is served with green vegetables and mashed potatoes or potato croquettes, but also with pasta. Serve well chaud on a previously heated plate.
