Omelette with chanterelles, garlic and parsley Ingredients: parsley - chopped salt - pepper - 6 eggs - 2 handfuls of - chanterelles - 2 cloves of garlic - semi-salted butter.

Beat the eggs into an omelette with a fork, the more they are beaten, the better the omelette will be!
Phase 3
Salt and pepper the preparation according to your taste.
Phase 4
Add the chopped parsley.
Phase 5
Rinse the chanterelles in clean water, without letting them "soak" and cut off the sandy base (not too much though).
Phase 6
Brown the chopped garlic over low heat in salted butter (semi-salted also works) until transparent (it should not burn).
Phase 7
Roughly chop the chanterelles and brown them with the garlic, turn up the heat (high at first, then medium).
Phase 8
“Sweat” the mushrooms.
Phase 9
When they are cooked, and there is no more water in the pan, add the seasoned egg mixture, cook over low heat.
Phase 10
Once the omelette is cooked to your liking, fold in half and serve with a large green salad.
