20 min -
Cooking:
5 min
Phase 1
To save time I cook the potatoes in water the day before. Cold, they are easier to peel and dice.

Phase 2
Then I make themis return to the pan with the garlic, parsley and olive oil. Book now.

Phase 3
Then cook the sliced onions. Once colored, add the bacon.

Phase 4
Meanwhile, beat the eggs with the cream and mustard. Salt and pepper.

Phase 5
Return the potatoes to the pan and pour the egg-cream-mustard mixture over them. Sprinkle with gruyere.

Phase 6
Stir a little but not too much. These are not scrambled eggs!

Phase 7
If you like it runny, cook it for 5 minutes.

Phase 8
Enjoy your meal!
