Clean all the vegetables, peel them.
Phase 2
Place the hen in a large pot and cover with water. Bring to a boil and skim.

Add the vegetables (fold the leeks in half), the chopped onion, the fine herbs, salt and pepper.

Cover and cook for 2 to 2:30 hours. The goose meatmust come off.

First serve the defatted broth, then the meat surrounded by vegetables.
