My Moroccan couscous Ingredients: 8- carrots- 8- onions- 2- green peppers- 2- red peppers- 8- zucchini chickpeas (quantity to adapt)- 800 g of- meat (beef, lamb, chicken) and 2 merguez- 8- turnips blanched cabbage- 4 pieces of pumpkin- 1 can of- peeled tomatoes (we keep the juice too).
Utensils: 1 frying pan - 1 pitter 1 dish -

Phase 1
Method:


Phase 2
- Brown the onions and remove them when they are golden


Phase 3
- Brown all the meats, except the merguez, which will be cookedat the last moment. To book.


Phase 4
- In the stewpot, add a little olive oil and brown all the vegetables except the zucchini and chickpeas if they are cooked/canned. Add the cut tomatoes, then their juice.


Phase 5
- At this stage, we add the spices, the quantity of which must be adjusted to everyone's taste... But we find ready-made couscous spices


Phase 6
For us:


Phase 7
- cumin, paprika, saffron, 4 spices, ras el hanout, ginger and a hint of cinnamon


Phase 8
Then, cover with strong meat broth, and leave to cook for 1h30 at a low simmer.


Phase 9
10 minutes before the end of cooking, add the zucchini and possibly the chickpeas.

That's it for the dish, now we have to take care of the seed... and there's a very good recipe on the site!
