Hundred-year-old eggs (China) Ingredients: 2 tablespoons of - vinegar - 1 onion - and ginger (to taste) 1 tablespoon of - cognac - or whiskey 1 tablespoon of - peanut oil - salt - sugar - pepper - 3 eggs - one-hundred-year-old eggs to peel delicately (in Asian trade) - .

Phase 1
Slice the eggs lengthwise, into 6 pieces per egg.
Phase 2
Cut onions and ginger into thin strips. Marinate the onions, ginger with vinegar and oil, adding salt, pepper and a pinch of sugar. Leave to rest for at least an hour.
Phase 3
To serve: place the eggs in the serving dish, place theonions and ginger all around. Sprinkle the eggs with a tablespoon of cognac.
Phase 4
Enjoy them with refinement.
