Phase 1
Beat the egg yolks by adding 1 pinch of salt, 2 pinches of poigrated cheese and 40 g of grated Parmigiano Reggiano.


Phase 2
Fill a large saucepan with water and heat it with two pinches of coarse salt.


Phase 3
Meanwhile, cut the pancetta into coarse strips and brown them in a pan with 1 tablespoon of olive oil.


Phase 4
When the water in the pan starts to boil, add your pasta.


Phase 5
Take two tablespoons of pasta cooking water, pour them into the egg yolks then stir.


Phase 6
Reserve the pancetta and leave the pan warm.


Phase 7
Once the pasta is al dente, drain it briefly and put it in the pan and stir.


Phase 8
Pour the mixture into a salad bowl and incorporate the egg yolk mixture.


Phase 9
Add the pancetta and two pinches of pepper. Serve.
