Tieboudieune (Senegal) Ingredients: 400 g of - peanut oil - 1- fresh green pepper - 3- red peppers - 1.25 kg of - rice - 250 g of - carrot - 300 g of - eggplant (round) - 3- onions parsley pepper salt - 1- thiof (failing a nice hake) of 1,250 kg, cut into pieces - 125 g of - tomato paste - 125 g of - Dried fish - 1 - cabbage (small) - 300 g of - sweet potato - 200 g of - turnip.
Utensils: 1 salad bowl 1 casserole dish - 1 saucepan - 1 dish -

Phase 1
Chop together an onion, the parsley and a small red pepper. Salt. Make a small hole in each piece of fish and fill with this mixture.


Phase 2
In a casserole dish, heat the oil. Brown the fish slices in it. Remove and replace with the rest of the chopped onions, the tomato paste (diluted in a glass of water - or better still in fish stock).


Phase 3
Bring to a boil. Reduce the heat and simmer for 5 minutes.


Phase 4
Add the eggplants, turnips, sweet potatoes, carrots, then the cabbage cut into quarters, the peppers cut into small pieces, the dried fish cut into sections. Cover with water. Salt, pepper.


Phase 5
Bring to the boil, reduce the heat, leave to simmer for a good half hour.


Phase 6
Add the slices of pgosling. Leave to simmer for another half hour.


Phase 7
Remove the fish slices and vegetables with a little sauce and keep them for presentation.


Phase 8
Leave the rest of the sauce on the heat, add the rice, cook for around twenty minutes.


Phase 9
Serve the cooked rice in a dish, decorate with the fish slices, vegetables and sauce.
