Roast veal orloff Ingredients: 15 cl of- crème fraîche- salt- butter- pepper- 1 kg of- roast veal- (under-nut or shoulder) 150 g of- gruyere- 250 g of- bacon- (round slices) 15 cl of- white wine- 1 tablespoon of- powdered veal stock-.
Utensils:
- 1 Spatula- spatulas 1 knife- knives 1 casserole dish- 1 brush- €6.72 1 bowl- salad bowls 1 Wooden spoon- 1 kitchen scale- scales 1 dish-
Total time: 1h15 Preparation: 30 min Rest:- Cooking: 45 min
Phase 1
Cut the roast all the way deep. Slip a slice of bacon and a slice of gruyere in each incision.
Phase 2
Heat a large knob of butter in a casserole dish, sear the roast on all sides to brown it.
Phase 3
Mix the veal stock in a bowl of water, pour into the casserole dish. Salt and pepper. Add the white wine.
Phase 4
Leave to simmer for 45 min. At the last moment, remove the roast, pour the crème fraîche into the sauce, mix (do not boil).
Phase 5
Serve the roast on a dish and the sauce separately.
