Confited and melting lamb shank Ingredients: 6 sprigs of - thyme - 10 tablespoons of - olive oil - 4 tbsp of - honey pepper (for those who like it) salt - 4 - shank of lamb - 1- garlic (all unpeeled cloves).

In a frying pan, melt the olive oil with the honey until you obtain a homogeneous mixture.
Phase 2
Place the lamb shanks in an ovenproof casserole dish, salt and pepper them to taste.Coat them with the olive oil-honey mixture. Add the unpeeled garlic cloves and the thyme.
Phase 3
Cover the casserole dish and put it in the oven for a good 2 hours at 170°C (150°C if a fan oven)
Phase 4
After an hour of cooking, monitor the cooking from time to time to add a little liquid or not: water, wine or broth (this depends on the material of the dish you are using). Enjoy your food !
